If you're going to follow a gluten free diet, might I recommend stocking up on Beano?
I really like Bob's Red Mill Gluten
Free Flour. Since I've got a lot of extra flour laying around, I
decided to make a mix of my own flour before it expired. While
doing so, I think I just happened to stumble upon their exact ratios of
flours used.
This recipe originates from Bette Hagman.
2 cups Garfava Bean Flour
1 cup Sorghum Flour
3 cups Potato Starch
3 cups Tapioca (Starch) Flour
Yields 9 cups
